HARD BOILED EGG RECIPE - EGG TOMATO
QUICK AND EASY for BREAKFAST, LUNCH, DINNER .
Hard boiled Eggs are tossed in a delicious tomato, mustard seeds & curry leaves tempering. Very easy to prepare, healthy, tasty, definitely, a must try recipe. It is served for breakfast, lunch or dinner though it's perfect for brunch on lazy weekends. Serve right away after cooking along with some roties, crusty bread or pita.
Ingredients -
3 hard boiled Eggs,
3 Tomatoes diced,
1 Tsp Red chili powder,
1/4 Tsp Turmeric powder,
1 Tsp Garam Masala powder,
1/2 Tsp Mustard seeds,
8 - 10 Fresh Curry leaves,
Salt to taste (1/2 Tsp)
Coriander/ Cilantro leaves,
Oil (1/4 cup oil)
Method -
• Slit eggs and separate egg yolk,
• Break egg whites to small pieces,
• *Do not cut the egg white with knife, it doesn't give good texture,
• On high heat add oil in the pan,
• Add mustard seeds & let it splatter,
• Then add Curry leaves,
• On High heat add tomatoes & stir for 2 minutes,
• *High heat will evaporate water before tomatoes get cooked,
• *Do not let tomatoes to cook completely or the dish will turn mushy,
• Water is evaporated and tomatoes are partially cooked,
• *Tomatoes used are raw as well as ripen,
• Add red chili powder,
• Turmeric powder,
• Garam Masala powder,
• Salt to taste,
• Mix all spice powders well with tomatoes & cook for a minute,
• Add egg white & mix well,
• Break & add egg yolk and mix lightly,
• And cook it for a minute,
• Add Coriander/ Cilantro leaves and mix,
• Turn the flame,
• Transfer it to a serving bowl,
• Garnish it with Coriander leaves,
• Serve it with hot Roties or Bread.
